Blueberry and Strawberry pancakes

Services provided:



175g plain flour
1tsp baking powder
2 eggs
150g milk
1 teaspoon honey
100g blueberries
100g strawberries,
tops removed and chopped
Greek yoghurt to serve


1. Sieve the flour and baking powder into a bowl and mix
2. Beat in the egg yolk, milk and honey
3. Add half the blueberries and strawberries and stir through
4. In a separate bowl, whisk the egg whites until stiff then gently fold into the mixture a third at a time.
5. Heat a frying pan with a teaspoon of oil then add 3 of four seperate spoons of mixture to make mini pancakes. Once it starts to bubble, flip over and cook for 1-2 minutes until golden, repeat until you have used all the mixture
6. Serve with some fresh berries and yoghurt to create a union jack theme!


Try using other fruits in the mixture like bananas or pear
