Bumper Bulgar Salad

Services provided:



250g plain dried bulgar wheat (cous cous or quinoa can be used instead)
150g feta cheese diced
Handful black olives halved
½ cucumber peeled and thinly sliced
Small tin sweetcorn drained
1 red pepper diced
1 red onion finely diced
Handful cashew nuts roughly chopped
Fresh parsley chopped
Teaspoon tomato puree
Teaspoon of dried basil and oregano
1 garlic clove peeled


1. Place the bulgar wheat in a bowl with the dried herbs, tomato puree and garlic clove (whole but bruised) and cover with boiling water, stir once then cover and set aside for 10 minutes
2. OPTIONAL: Heat a teaspoon oil in a pan and cook the onion and pepper for 5 minutes to soften, this will make the flavour a bit sweeter, raw is also fine
3. After 10 minutes, remove the garlic clove, run a fork through to separate the grains then simply add all remaining ingredients and serve.
Can be eaten hot or cold


A great alternative for packed lunch, try adding your favourite fruit and vegetables or even some chicken or ham
