Champions Chicken Stir Fry

500g chicken breast cut into strips
1 pack medium egg noodles
2 carrots peeled and cut into thin strips (julienne)
1 red pepper cored, seeded and cut into thin strips
1 small onion, finely sliced
Small tin sweetcorn drained
1 bag fresh spinach washed
2 gloves garlic crushed
2cm fresh ginger grated
1 tablespoon oil
½ teaspoon Chinese 5 spice
For the sauce:
1 teaspoon cornflour
3 tablespoon water
2 tablespoon soy sauce
2 tablespoon sweet chilli sauce or oyster sauce (optional)

First prepare the sauce by mixing the cornflour and water to make a paste, then add the soy sauce and sweet chilli/oyster sauce (if using), mix then set aside
1. Heat the oil in a large wok and add the onions, garlic and ginger, cook gently for 3-4 minutes
2. Add the Chinese 5 spice and cook for a further minute
3. Increase the heat, add the chicken and stir fry for 3-4 minutes
4. Next add the carrot and peppers and cook for 2 minutes
5. Give the sauce a quick stir then add to the wok to coat the vegetables, once thickened, add noodles, sweetcorn and spinach and stir fry for a minute or two until everything is hot and coated in the sauce.
