Tasty Gazpacho

Services provided:



2 tins chopped tomatoes
4 spring onions
2 garlic cloves chopped
½ cucumber peeled
½ red pepper
2 tblsp olive oil
2 tblsp balsamic vinegar
3 fresh basil leaves

Reserve ½ spring onion, 3 slices of cucumber and a slice of red pepper to decorate, chop finely.


1. Place tomatoes, onions, garlic and cucumber into a blender and blend until smooth
2. Slowly add the balsamic, oil and basil and blend for 20 seconds
3. Serve chilled with a generous handful of the chopped vegetables to decorate and a good twist of black pepper


Use fresh tomatoes instead of tinned when in season, May – October
