Ingredients

200g smoked salmon trimmings
100g quark soft cheese
handful watercress leaves
1 tsp horseradish sauce
1 lemon,
juice and zest
black pepper

Method

1. Place the watercress in a blender for 10 seconds to chop
2. Add the remaining ingredients and blend until conbined, do not over blend as this will ruin the texture, I like to have some bits of salmon left.
3. Serve with scotch oatcakes or toast.

Tip
Try adding a little chilli powder or cayenne pepper for an extra kick
