Super Quick Noodle Soup

Services provided:



150g noodles, ideally wholewheat ones
1 tsp olive oil
1/2 onion, peeled and finely diced
2 cloves garlic, peeled and finely chopped or grated
100g mushrooms, sliced
1 medium carrot, peeled and finely sliced
100g baby corn
100g broccoli florets cut into small pieces
1/2 red pepper, finely sliced
1 tblsp tom yum paste,
2 tbsp soy sauce
1 litre vegetable stock
Fresh coriander,


1. Prepare the noodles according to instructions
2. Gently heat oil in a large pan, add onion and garlic and cook for 2-3 minutes to soften
3. Add remaining vegetables and tom yum paste and stir through
4. Add stock and soy sauce and bring to a simmer for 3-4 minutes
5. Add noodles to heat through
6. Serve sprinkled with fresh coriander
